Avocado Blackbean Wrap
|4 Tortillas||1/4 Cup Red Onion, diced|
|1 Ripe Avocado||1/2 Cup Tomato, diced|
|1 Can Black Beans||2 Cups Broccoli, diced|
|2 Tbsp Sour Cream||1 tsp Garlic Powder|
Mash avocado with a fork. Add sour cream, red onion, tomato and a bit of salt and pepper. Generously spread avocado mixture over tortilla. In a medium skillet saute broccoli in 2 tsp olive oil until tender; sprinkle with garlic powder. Add beans and continue to cook until warm. Place black bean mixture in tortilla, wrap and serve.
*for a meat filled version, add diced chicken.
