Avocado Tomato Melt Sandwich

4 English muffins or bagels, split1/4 c. chopped fresh Basil leaves
1 ripe Avocado, peeled, pitted, and slicedFresh Mozzarella Cheese, sliced thin
1-2 large vine-ripened Tomatoes, sliced thin1/4 c. Grated Parmesan Cheese
Coarse saltFresh ground Black Pepper

Preheat oven broiler to high. Under the broiler, toast english muffin halves on a baking sheet until golden brown. Remove from oven.

Top each muffin half with sliced avocado and sliced tomato; salt tomato lightly. Sprinkle chopped basil leaves over the tomatoes. Put a layer of mozzarella cheese on top of basil leaves, sprinkle parmesan cheese and top with black pepper.

Broil prepared muffins for 2-3 minutes or until cheese has melted. Remove from oven, and enjoy.
