Bacon Wrapped Meatloaf

(Serve with Stir-fried Green Beans)

4 Strips of Bacon
1/4 Cup Parmesan Cheese
1 lb Ground Beef
1 (4oz) Can Mushrooms, drained
1 Tbsp Onion, minced
Lemon Pepper
2 Tbsp Green pepper, diced

Cook bacon until limp. Pat with paper towel to remove grease, set aside.

Spread ground beef onto waxed paper, making a 12x8x1/4 inch rectangle. Sprinkle with salt, lemon pepper, parmesan cheese, mushrooms, onion and peppers. Roll ground beef like a jelly roll. Wrap with 4 strips of bacon, secure with a toothpick. Place in a loaf pan and bake for 1 hour at 350. Allow to rest before serving.

To freeze place raw meatloaf in a ziptop bag and freeze. To serve, thaw; place meat in a loaf pan and bake for 1 hour at 350.
