1 large butternut squash, peeled & cubed
1 Tbsp olive oil
1 Tsp ground cumin
1 Tsp ground coriander

½ Tsp Salt, plus more to taste
½ Tsp Pepper, plus more to taste
2 Tbsp chopped fresh cilantro
1 Tbsp fresh lime juice

Preheat oven to 400. In large bowl, combine squash, oil, cumin, coriander, salt and pepper. Stir to coat. Transfer the squash to a large baking sheet and roast until tender and browned, about 25 minutes. Transfer to a serving bowl, add cilantro and lime juice, season with salt & pepper, toss to combine.
