Citrus Salmon

(Serve with Rice and Cole Slaw)

1 1/3 Cups lime juice

1/4 cup vegetable or olive oil

1 teaspoon grated lime peel

1/2 teaspoon cayenne pepper

4 small tomatoes, chopped

1 small sweet red pepper, chopped

2 green onion, thinly slice

Salmon fillets (6 oz. each)

In a small bowl combine lime juice, oil, lime peel, and cayenne pepper.  Set aside.
Heat skillet to medium.  Cook vegetables in 1 Tablespoon of vegetable or olive oil for 3-4 minutes.  Add sauce and stir.  Add salmon and cook over medium heat for 6-7 minutes on each side or until fish flakes easily with a fork.   Serve over rice if desired.
