Crispy Coconut Chicken
|2 Tbs. Ketchup||Chicken, cut into thin strips|
|1 Tbs. Honey||3 Eggs beaten|
|1 Tbs. Sambal||1 c. Panko bread crumb|
|1/2 c. Orange Juice||1 c. Shredded Coconut|
In a saucepan combine ketchup, honey, sambal, and orange juice. Reduce on low for about 5 minutes then set aside. Heat deep pan on medium heat with oil filled about 1 inch.
Salt and pepper the chicken. Dredge the chicken in eggs, then in the bread crumbs and coconut mixture. Drop the chicken in the hot oil and fry until golden brown.
