Crispy Coconut Chicken

2 Tbs. KetchupChicken, cut into thin strips
1 Tbs. Honey3 Eggs beaten
1 Tbs. Sambal1 c. Panko bread crumb
1/2 c. Orange Juice1 c. Shredded Coconut

In a saucepan combine ketchup, honey, sambal, and orange juice. Reduce on low for about 5 minutes then set aside. Heat deep pan on medium heat with oil filled about 1 inch.

Salt and pepper the chicken. Dredge the chicken in eggs, then in the bread crumbs and coconut mixture. Drop the chicken in the hot oil and fry until golden brown.
