Adapted from an Allrecipes Recipe.
2 Cups Rice | 1 Can Corn |
4 Cups Water | 1 Can Diced Tomatoes w/ green chilies |
4 Cans Black Beans | 12-16 Flour Tortillas |
2 Cans Pinto Beans | Shredded Cheese |
2 Cans Shredded Chicken |
Cook rice in water until tender (about 25 minutes). Rinse black and pinto beans and add to chicken, corn, and diced tomatoes. Mix bean mixture well with rice and shredded cheese. Divide mixture evenly among tortillas, wrap tightly, cover in plastic wrap and freeze.
To serve, unwrap and warm in the microwave until heated through.
