French Bread


 (3 or 4 Loaves)                                                           (2 loaves)

5 T oil
1 1/2 T salt
4 1/2 T sugar
3 T yeast
3 3/34 c hot water
9 c flour
egg white
3 T oil
1 T salt
3 T sugar
2 T yeast
2 1/2 c hot water
6 c flour


Mix oil, salt, sugar, water. Add half of the flour. Mix. Add yeast. Add more flour until the dough cleans the bowl as it mixes. Let rise in mixer bowl for 10 minutes. Mix to break rise. Raise 10 more minutes. Repeat until it has risen 5 times. (5 times for 10 minutes each)

Oil counter (spray with pam). Cut dough in half or thirds for 2 or 3 loaves. Form into loaf shapes. Put on a cookie sheet lined with parchment. You can fit 2 loaves on one pan. Brush with egg white, sprinkle with sesame seeds. Slice top diagonally. Raise 15 minutes. Bake for 20 minutes at 375.
