Fried Chicken Breasts

(serve with Crunchy Green Beans)

4 boneless Chicken Breasts 2 Eggs, beaten
20 Saltine Crackers, crushed 1/4 tsp Black Pepper

Combine eggs, pepper and 2 tbsp water.  Pound chicken to 1/4 inch thickness. Dip chicken in egg mixture and crushed crackers. Cook in vegetable oil until golden brown.
