6 Eggs, beaten | 1/3 Cup Whole Kernal Corn |
1/3 Cup Milk | English Muffins |
Salt and Pepper to taste | Sliced Cheese |
1/2 Cup Chopped Ham |
Coat a medium skillet with olive oil. Heat oil over medium heat. Meanwhile, beat together eggs, milk, salt, and pepper. Add to skillet, covering the bottom of the skillet evenly. As the egg cooks, use a spatula to lift up the cooked edges allowing the uncooked egg to run underneath. Continue cooking and folding until egg is fully cooked but not dry. Add ham and corn to eggs. Remove from heat and cover.
Place a spoon full of egg mixture on each english muffin. Cover with cheese slices. Broil 1-2 minutes or until cheese melts.
