Lemon Waffles

Lemon Waffles

4 Eggs, separatedLemon Peel from 1 lemon
1/4 Cup Sugar1/4 Cup Butter, melted
1/2 tsp Salt1 1/4 Cup Flour
1 Cup Milk1/2 tsp Baking Powder
1 Tbsp Fresh Lemon Juice 

In a medium bowl, beat egg yolks with sugar and salt. Blend in milk, lemon juice, lemon peel, and butter. Beat well. Add flour and baking powder. Beat egg white until stiff and fold into batter. Bake in a preheated waffle iron until golden brown.
