Mashed Sweet Potatoes
|Sweet Potatoes or Yams||Salt & Pepper (to taste)|
|Sour Cream (about 1/2 Cup per lb)|| Butter (about 1 Tbsp per lb)|
Peel potatoes and cut into 1 inch cubes. Add to a pot of boiling water. Boil until tender, drain. Add butter, salt and pepper. Mash well. Fold in sour cream just before serving.
