Mashed Sweet Potatoes

Mashed Sweet Potatoes

Sweet Potatoes or Yams
Salt & Pepper (to taste)
Sour Cream (about 1/2 Cup per lb)
 Butter (about 1 Tbsp per lb)

Peel potatoes and cut into 1 inch cubes. Add to a pot of boiling water. Boil until tender, drain. Add butter, salt and pepper. Mash well. Fold in sour cream just before serving.
