No Bake Engergy Bites

1 c. Dry Oatmeal
1/2 c. Chocolate Chips
2/3 c. Toasted Coconut Flakes
1/3 c. Honey or Maple Syrup
1/2 c. Peanut Butter
1 tsp. Vanilla Extract
1/2 c. Ground Flaxseed or Wheat Germ
1 Tbs. Chia Seeds, optional

Mix all ingredients together in a medium bowl until thoroughy mixed. Cover and let chill in the refrigerator for a half an hour. Once chilled, roll into balls the size of your choice. Store in airtight container and keep refrigerated for up to one week.
