Open Faced Ham and Egg Sandwich

1 large beaten egg1 slice of multigrain bread, toasted
1/2 cup shredded cheese2 slices of tomato (optional)
2 tablespoons snipped fresh chives or 2 teaspoons dried (optional) 

Coat a small nonstick skillett with cooking spray and heat over medium heat. Scramble eggs and add cheese and chives (optional) for 1 1/2 to 2 minutes place on toast and top with tomato (optional).
