Pepper Jack Pork Chops

(Serve with Parmesan Orzo and fruit cocktail)

1/2 Cup Olive Oil3 Boneless Pork Chops
1 Tbsp Lemon Juice         Topping:
3 tsp Minced GarlicSliced Ham
2 tsp grated lemon peelSliced Red Onions
1/2 tsp each salt and pepperSliced Pepper Jack Cheese
1/2 tsp each dried basil, parsley, rosemarySalt and pepper

In a large ziplock bag add all ingredients except toppings. Shake bag well to coat pork. Refrigerate for 2 hours or overnight. Drain and discard marinade. Broil pork chops for 5-6 minutes on each side until no longer pink.  Place ham and onions on pork chops, cover with cheese. Broil for an additional 2 minutes or until cheese is melted.
