Rhubarb Strawberry Pie Filling

Ingredients:
3 large apples, peeled and finely chopped
1 Tbs. grated orange zest
¼ c. freshly squeezed orange juice
7 c. sliced rhubarb (1in/2.5cm slices)
2 c. granulated sugar
4 c. halved hulled strawberries

1. Prepare canner, jars and lids.

2. In a large stainless steel saucepan, combine apples and orange zest and juice. Stir to coat apples. Stir in rhubarb and sugar. Bring to a boil over medium-high heat, stirring constantly. Reduce heat and boil gently, stirring frequently, until rhubarb is tender, about 12 minutes. Add strawberries and return to a boil. Remove from heat.
3. Ladle hot pie filling into hot jars, leaving 1in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot filling. Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to fingertip-tight.
4. Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process for 15 min. Remove canner lid. Wait 5 minutes, then remove jars, cool and store.
