2 Tbsp Fresh Parsley | 1/2 tsp Pepper |
2 Tbsp Olive Oil | 3-4lbs Butternut squash, peeled and cut into 1inch cubes |
2 tsp Minced Garlic | 1/3 Cup Parmesan Cheese |
1 tsp Salt |
Preheat oven to 400. In a small bowl combine parsley, olive oil, garlic, salt, and pepper. Add squash and toss to coat. Spread evenly over a baking sheet and bake in oven for 50 minutes or until tender. Add parmesan cheese during last 5 minutes of cooking.
