1/2 Cup Red Onion, diced | 1 Can Black Beans, drained and rinsed |
1 Pint Grape Tomatoes, halved | 1/4 tsp Fresh Lime Zest |
1 Yellow Bell Pepper, diced | 2 Large Avocados |
2 Tbsp Jalapeno Peppers, diced |
Combine all ingredients except avocados. Add dressing to vegetables and mix well. Add avocados just before serving.
Dressing:
1/4 Cup Fresh Lime Juice | 1/2 tsp Pepper |
1/4 Cup Olive OIl | 1/2 tsp Cayenne Pepper |
1 tsp Salt | 2 tsp Garlic, minced |
To prepare dressing, blend all ingredients well.
